Monster Cupcakes

INgredients
3 large eggs
1/2 cup regular, full-fat sour cream
1/4 cup mayonnaise
1/2 cup vegetable or avocado oil
1 box chocolate cake mix (15.25 oz)
1 package chocolate pudding mix (3.4 oz)
1/3 cup miniature chocolate chips
1/2 cup walnuts, finely chopped
1/2 cup water
Marshmallow Fluff frosting
13 oz marshmallow crème or marshmallow fluff
1 cup butter, softened
2 cup confectioners sugar
2 tsp vanilla extract
pinch salt
Directions
Preheat oven to 350 degrees F.
Line cupcake pan with liners and set aside.
In large bowl, whisk eggs.
Stir in sour cream, mayonnaise, and oil until combined.
In separate bowl, mix cake and pudding mixes. Add chocolate chips and walnuts.
Mix both bowls together. Stir in warm water until just combined.
Fill liners 3/4 full and bake 20-25 minutes.
Remove and allow to cool completely.
Frosting
Beat together marshmallow crème or fluff and butter in bowl or stand mixer.
Mix in confectioner’s sugar and vanilla on medium speed at least 2 minutes until fluffy and smooth.
Add in generous pinch of salt and mix again.
Decorate
Transfer small amounts of frosting into zip lock bags.
Add food coloring as desired
Snip corner or use piping bags and tips to decorate.
