Breakfast Burritos


Ingredients:

  • 16 eggs

  • 1 lb sausage

  • ½ pack bacon

  • 1 yellow onion

  • 3 cloves garlic

  • 6 med potatoes (chopped) or breakfast potatoes

  • 2 cups Cheddar cheese (shredded)

  • 4 green onions (chopped)

  • cilantro (chopped)

  • 16 tortilla shells

  • Salt and pepper to taste

  • Cumin

  • Onion powder

  • Garlic powder

  • Tin foil for wrapping

  • Optional: hot sauce

Directions:

  1. Chop potatoes & boil until soft (don’t overcook).

  2. Saute onion until soft, add sausage and fry.

  3. Fry eggs w/ salt and pepper, cumin, garlic powder, and onion powder

  4. Combine all ingredients and wrap in shells w/ cheese.
